Oil is part of the diet as it is part of food products but also is used as a technical aid in hot (baking) or cold (dressing) food preparations. For these reasons, oil gained an attraction from consumers with regard to the quality, safety, and wellness of oil sources in the food plate. Limitations of land availability, climate change, and green chemistry approaches are issues to be considered regarding the current production and trade of edible oil. It is necessary to assess the current oil sources within the present scientific-technical knowledge to identify the potential strategy for future edible oils. The first portion of this chapter will provide a brief overview of edible oil. The subsequent sections will highlight different animal and plant-based sources, as potential edible oil sources. The final section will emphasize the perspectives and challenges of this sector and the potential strategy to overcome the potential foreseen limitations.
In this work, a guided-inquiry laboratory experiment that introduces the use of nanotechnology with analytical purposes in the curriculum of undergraduate students is proposed. A published laboratory procedure was used as the basis for implementing the experiment with different levels of inquiry. This involves the use of magnetite nanoparticles for determining cadmium in groundwaters by electrothermal atomic absorption spectrometry (ETAAS). Nanoparticle synthesis and analyte sorption were carried out simultaneously by ultrasound irradiation, then separation of magnetite nanoparticles was performed with an external magnet. Students were required to apply the experience acquired to Se(IV) determination. This element was selected on the basis of its different interaction with magnetite and difficulty to be determined by ETAAS in the presence of iron from magnetite. Students were assessed taking into account diverse activities such as planning of experiments, laboratory performance or obtained conclusions. A questionnaire to assess students’ satisfaction was also used.
